Olive Oil Stories | Communal Table | Culinary Lab

This event invites you to explore an essential culinary ingredient through food science and culinary intuition.

This event is part inspirational session, part culinary workshop. Designed by Terri Salminen, a professional chef, storyteller, and teacher, the day is centered on exploring flavors.

The day begins

The morning begins with a talk led by award-winning olive oil taster Francesca de Ritis. She will explore the complexity of new-crop (extra virgin) olive oils, showing you how to taste this ingredient with all your senses in a truly inspiring way!

the communal table

At lunchtime, you’ll find a seat at a communal table set with spring greens and the first herbs of the season. The focus is on good food prepared with thoughtful flavors, featuring textures created by a combination of raw and cooked ingredients that celebrate the simple beauty of Italian regional cuisine.

The Culinary Lab

The afternoon is devoted to hands-on cooking sessions where extra virgin olive oils reveal their magical properties. Think of the afternoon as an exercise in “cooking grammar”—a concept I’ll explain in detail as we share recipes and cooking guidelines in a collaborative kitchen setting. You’ll sample homemade ingredients to add to your repertoire of culinary techniques suitable for every season, especially those where vegetables (and fruits) take center stage.
