The Language of Food . Edition 2 . “For the Love of Olive Oil”

The morning begins with a talk guided by the award-winning olive oil taster Francesca de Ritis. She will unravel the complexity of new harvest (extra virgin) olive oils, showing you how to experience this element with all the senses in a beyond inspiring way!

For lunch, you will find a seat at a shared table, composed with spring leaves and the first herbs of the season. Textures created by raw and cooked ingredients, that celebrate the simple beauty of Italian regional cooking is the focus for good food prepared with thoughtful flavors.

The afternoon is dedicated to hands-on kitchen practices where the story of extra virgin olive oil as an essential ingredient will show its magical effects. Call the afternoon an exercise in ‘cooking grammar’ — a concept I will tell you all about while sharing recipes and cooking guidelines in a collaborative kitchen setting. You will taste self-made ingredients to add to your storehouse of culinary techniques relevant for every season, especially where vegetables (and fruits) are the centre piece.
