Our food design library is the first in the world. Food design is a new field.
Although the first food designers started over 25 years ago, the discipline has only really spread worldwide in the last 10 years. Nowadays, there are food design courses and organizations. That is not so strange. Food design is not about beautiful food. It is about looking differently at something you think you already know: Food. But what is food actually? Why do people eat pigs but not dogs? Carrots but not lichen?

Food designers use food to make you look at the world differently. Sometimes they make dinners and tastings. But very often they also make future food, they do workshops to get children to eat vegetables, they help people with Alzheimer's to recall memories with food, or they make new applications for seaweed, for example.
Food designers have a serving role. They build bridges. Between farmers and consumers, for example. Between scientists and children or between bacteria and artists. These bridges are not ordinary bridges. They are more like roller coasters with loops. While you can go from one side of the bridge to the other, you float upside down and see the world differently.
